Jersey Royal Gin Paloma
What says 'summer' more than a light, refreshing cocktail? Not a lot, in our opinion. Say hello to our drink of the moment: a surprisingly zingy, sweet and salty Paloma, which will tingle your tastebuds and leave you wanting more.
Recipe (serves 4)
2 tbsp caster sugar or sugar syrup
2-3 pink grapefruits or 300ml grapefruit juice (leave 4 small slices aside to garnish)
4 x 35ml measures Jersey Royal Gin
Juice of 2 limes
About 250ml soda water
Freshly ground Jersey Sea Salt
4 mint sprigs (optional, to serve)
Method
Dissolve the sugar in 2 tbsp water in a small pan and simmer for 1 minute to create a syrup.
Squeeze 300ml juice from the pink grapefruits and stir into the sugar syrup, removing pips as you go.
Dip the rim of your tumblers in water, then dip into a small dish of ground Jersey Sea Salt to get a nice even covering the whole way round.
Fill your glasses with ice and add a measure of our Jersey Royal Gin to each.
Divide the grapefruit juice syrup between your glasses and squeeze the juice of ½ lime into each.
Top up with soda water and garnish each drink with a slice of grapefruit and mint if you desire.
Head out into the sun and enjoy!
